Here are the steps on how to make vinegar out of coconut water.
1. After cracking(opening) the aged coconut fruit (brown in color,not the green ones), gather and filter the water and put it in a clean plastic container. We'll be needing 1 liter of coco water. You can pro rate the ingredients later if you want to make volume vinegar.
2. For every one liter of coco water, mix 1/2 cup of sugar,any sugar will do, and 1/4 tea spoon of yeast ( i used bakers yeast and it worked just fine)
3. After thoroughly mixing the sugar, cover the mixture with a piece of clean cloth, it is important NOT to cover the mixture tightly as the fermentation process produces bacteria and in turn produces "air" that will help build up pressure when you cover it tightly.
4. Set aside for 2 weeks.
5. After 2 weeks, transfer the content to other container, during the transfer process, air is introduced into the mixture. This signifies the end of the first stage, the fermentation, and the start of the second stage, the acidation (don't know the right term) it is also in this stage that we mix 1 cup of mother vinegar, mother vinegars are ordinary native vinegar that's aged enough and sour enough. The introduction of mother vinegar to our mixture also introduces certain bacteria found in the mother vinegar. These bacteria will turn our mixture into vinegar.
6. leave the mixture again for 2 more weeks. After that you have your very own vinegar.
